here's a baked version of a normally fatty(er) treat. My mom made some baked chocolate donuts during her visit and they weren't all we were hoping for. I used to make these in college and they were always a hit -- so here Mom -- try these out.
combine:
2 c flour
2/3 c sugar
2 T yeast
1 t salt
1 t lemon or orange peel
1/2 t nutmeg
heat(butter doesn't need to be completely melted)
1 3/4 c milk
1/2 c butter
gradually beat liquid mixture into flour mixture for 2 min
add:
2 eggs
1 c flour -- beat again: 2 min
appx. 2 c more flour -- stir in to make soft dough
cover with plastic wrap and refrigerate at least 2 hours or up to 24 hours
punch dough down
knead 1 min; adding 1/2 c flour if necessary
roll out 1/2 in thick
cut into donuts
place on prepared baking sheets -- cover with towel
let rise 30 min or until doubled
bake 8-10 -- 400 degrees 'til golden brown
Glaze:
1/4 c milk
2 c pwd sugar
1/2 t cinnamon
remove from pan and cool for 5 min -- dip tops into glaze and allow to drip down sides
makes 2 doz donuts and holes
